Hash Brown and Sausage Casserole with Caramelized Onions

My family can't wait to have this dish again. My daughter loves sausage and it is not something I cook often so I was sure she would love it. This recipe turned our Easter dinner into Easter brunch. What a great idea and meal.It's easy to prepare but expect the compliments and requests for the recipe. Michael's table always looks lovely. He decorates beautifully and all his guests have a hand made menu to take home to remember a wonderful day filled with good food and good friends. Missing from our holiday table were our beloved friend Nat who has moved back to New York City and Mike who went home to spend the holiday with his family. Know Paula must have had a special Easter with her friends and family.Can't we just see her coloring eggs with little Jack and helping him hunt all the eggs the Easter Bunny left. We were wondering over dinner what Paula had for her Easter dinner? She certainly made our day special.Thanks Paula!

Baked French Toast with Sweet Pear Topping

We decided to go with a "brunch" theme for Easter Sunday and this was a great dish! Don't do what I did and think that the prepared "pear topping" goes inbetween the layers of cinnamon raisin bread, you're supposed to use a jar of pear preserves for that. The pear topping is supposed to be used to garnish the toast when it comes out of the oven, we ended up using maple syrup instead and it was just great! Enjoy

Bacon and Pimiento Cheese Muffins

These muffins were good, but we expected them to be a little more flavorful with the pimiento cheese. I had to make them in the smaller size since I discovered while baking I did not have the larger muffin paper liners. I am not sure if they might have been tastier in a a larger size. Although my daughter who loves cheese really liked them and enjoyed leftovers. I would suggest you give them a try to see which opinion you agree with. Thanks Paula.

Suprise Muffins

Don;t Michael's Easter decorations look lovely! Our good friend Nat always loved coming to Michael's. He loved the decorations, great food, and special friends. How much we miss you Nat. We are happy you are back home in New York City but holidays are just not the same.

The mini muffins around the edges were surely a surprise. There were two muffin recipes on the same page, Surprise and Cream Muffins. I made the wrong muffins. Pictured are Cream Muffins with a surprise in the middle. I will have to try the Surprise Muffin recipe sometime. Also I was surprised to find I only had the little muffin paper cups so I had to down size. This allowed us to see the surprise not find it as we bite into the muffin. Paula used Kisses and strawberries. I added some Reese Cups. I was surprised to find my favorites were the strawberry. I am a chocolate and peanut butter lover. The baked strawberry gave it a strawberry shortcake flavor. Paula is so good you can mess up on her recipes and still have a success. Thanks Paula!
